Well, it's not easy finding niche fragrances under $200, but there are some. However, I'll list the fragrances I believe are best suited for winter under $200, even if they aren't really from niche houses.
Parfums de Marley Herod: If you like the blend of tobacco, vanilla and cinnamon, then this is one fragrance well worth considering. Perfect for winter nights, although the performance varies from person to person.
Maison Francis Kurkdijan Oud Satin Mood EDP: Considered a gem by many in the industry. It starts off with floral accords, settling down to more sweet woody, vanilla and ambery notes. It may lean a bit feminine for some, but it's a unique scent that will get you noticed (and it also performs beastly).
Initio Parfums Prives Blessed Baraka: This one is a more dark, luxurious, sexy sweet fragrance which doesn't get the recognition it deserves, imo. It's also pretty strong and long lasting.
Nishane Ani: Gorgeous vanilla surrounded by beautiful spices. It's a very strong fragrance, perfect for the winter, but for some it might be a bit too harsh, and it's also quite expensive and overrated by other's opinions.
Killian Angels' Share: A well renounced and expensive fragrance, with a nice woody, sweet, vanilla, and gourmandy blend, as well as a boozy note. Very strong performance, but it could be too sweet for some people. And you also got Lattafa Khamrah and Khamrah Qahwa which while are not exactly the same as Angels' Share, they share many traits and have the same gourmandy vibe, just a bit less sweet, which could make them more versatile than Angels' Share. And they're a lot cheaper.
Tom Ford Noir Extreme: One of Tom Ford's most famous fragrances and also one of the most affordable ones. It's warm, sweet, spicy, with a good amount of vanilla notes as well as some woody notes. Its performance is excellent, through and through.
Paco Rabanne 1 Million Prive: The best from the 1 Million lineup, imo. It's a very sweet, spicy, cinnamon heavy with tobacco accords masterpiece. It may be too sweet for some, but that's not the main issue. The main issue is finding it for sale, as it has been discontinued for a good while now.
Jean Paul Gaultier Le Male Elixir: This one will set the standards for what you perceive as too sweet. It's a hype beast lately, and while I prefer Le Male Le Parfum, this one is close behind in JPG's top 5 for sure. Very sweet vanilla, with amber and honey accords. Very long lasting too. But it can be too cloying, so it's not very versatile.
Initio Parfums Prives Oud for Greatness: Another expensive one that gets plenty of hype. But it's good hype. It's a very high quality, warm spicy and woody fragrance with some faint florals on the top. Performance is excellent, but again, a bit overpriced. You can find Lattafa's Bade'e Al Oud Oud for Glory which is a clone of Oud for Greatness, at a much much cheaper price and it is very similar.
Parfums de Marley Oajan: Intoxicating ambery, warm, spicy, cinnamon and vanilla masterpiece with beastly performance. It might stretch the $200 budget a bit, but it's worth it if you prefer it over the other ones listed.
Also, DO NOT blind buy any of these. You should definitely first try each and see what you like, as blind buying a $150-$200 fragrance is definitely not something you want to do.

i recommend one that i recently tried its called Cherry Punk | Extrait de parfum by room 1015 it is 190euro for 100ml.
Also one that i have and is nice is Almond Harmony by THOO it is a sweet creamy alkmond with vanilla and some tonka bean and some other notes that give it a slight dark edge.
Also a house i recommend u to check out it Loewe they have great perfumes for around 100-180 bucks 100ml
Hope this helps
These are some of my sweeter, cold weather preferences. I love the Lutens ginger for rainy days.
