Interesting Facts
Modica chocolate is a chocolate speciality from the Sicilian town of Modica. It is traditionally made ‘cold’ (‘a freddo’) and is not conched. The sugar crystals do not dissolve during this process. The finished chocolate therefore has a grainy, rough texture, with small air bubbles trapped within it; it crumbles when broken. When sold, the bars have a slightly grey surface due to the separation of cocoa butter. It is said to have a particularly intense cocoa aroma.
