Pashmak, also known as ‘Persian candyfloss’, is an Iranian dessert made from sugar pulled into fine threads, flour and often ingredients such as saffron or pistachios. It resembles Western candyfloss in appearance, but differs in its production, texture and taste: the strands are pulled rather than spun, are less sticky, melt more slowly and have a slightly buttery, caramel flavour rather than being purely sweet.
