As it dries down, yes, the sweetness dissipates a bit while the bitterness keeps going steady. The opening is quite sweet tho, more than I'd like. But I don't know if it's just my lack of experience with bitter notes or something else, but to my nose the whole composition here has an artificial edge. But I will assume that's just the bitter aspects of the juice
