Today I got to know Burberry.
And this is a classic jam made from red berries in the most delicious sense of the word. So when you cook the jam and it starts to boil and thicken, a frothy film forms on the surface. It is airy and sweet. That's exactly what you try with a spoon... very carefully you blow on it and dive in :-) The jam foam will stretch a bit and stick to your teeth.
At the bottom of the pan, the jam got a little burnt and a faint bitter smell lingered in the air.
* I don't hear any jasmine (to my regret). And as for the benzoin, I have no idea :-) But when you press your nose directly to the skin, there is a note that is strange. As if a beetle is sitting on a huge beautiful raspberry. But for the aromatic flavor, one can endure not just the little pest, but much much more :-).... maybe that's the benzoin?
But overall, it is a red, sweet, and transparent jam syrup with berries on top.
The scent is still too sweet for me though.
