A high-quality, utterly unique yet not entirely straightforward olfactory experience: vinegar and lactic acid cultures from kombucha in all manner of tart roses, which initially evoke the aroma of dry wine. Hints of miso and soy sauce, fennel, and olives shift the scent further toward the Far East. The bitter-sour sauce flows into steaming Thai mushroom risotto, enhancing the flavor, while oud resin glows ethereally above it. Crazy. Exciting. But ultimately not for me.
Watch out, who you call 'fennel' e.g. in Lucca. 🙃
