Persipan
Persipan is a substitute for marzipan. It is made from the nut kernels of peach and/or apricot pits. They do not taste nearly as aromatic and lovely as almond kernels, but for pastries, they are likely enhanced with bitter almond aroma. Even at the first sniff, I can strongly smell this scent component. Then the mentioned herbs come into play, something minty, thyme, sage. Quite strangely, "Champa Flower" develops. A little waxy, a little like thyme-sage cough drops. Because the scent is also sweet, smelling of honey and a bit malty. It could be the flowers of these herbs that bring the sweetness to the fragrance. However, since the herbs also dominate the persipan scent after a short time, I cannot identify the types of flowers. The bitter almond scent remains more or less perceptible. There’s something to this fragrance. In any case, it is a winter scent.
