Making Apricot Jam in an Ancient Monastery
When I smell this, it brings me to the kitchen of an old stone monastery where the monks are making apricot preserves. This is an atmospheric gourmand. It's the scent of resinous myrrh and sticky Balsam of Peru; of dust, stone and glass; ripe apricots stewing with cloves, cardamom, creamy Tonka bean and other spices. Warm, yet cold with a subtle fruitiness
