NO... NOT QUITE BAKLAVA...
Good, but not truly a gourmand. It has a distinct patchouli note and fluffy florals. Orange blossom shines, but almost smells like a mimosa tree in bloom, with pollen. Roasted nuts, especially almond, are prominent, and the pistachio is dry and realistic, mixing beautifully with the almonds. The honey is like expensive, artisanal honey from the farmers’ market, the kind in a fancy jar with a flowery description designed to justify the ridiculous price. Light, airy, not sticky or overly sweet, it even has a hint of waxy honeycomb, basically honey for folks who think honey from regular grocery stores is for uncultured people.
I think the citrus notes and orange blossom ruin the gourmand illusion a bit, because baklava does not smell like citrus or flowers. The patchouli in the base is prominent too, which destroys the gourmand even further. For actual baklava, I wanted more realism and fewer perfumey elements. This is not a photorealistic take at all. The real bummer is that the nutty notes don’t last long and disappear in about 30 minutes, leaving mostly citrusy honey and patchouli at this point, which makes it smell more like honey cough drops than actual baklava.
It is balanced, though it is missing the sugary, sticky element I imagine when I think of baklava, the dessert. The florals could also be distracting from the main course. Imagine a bakery in the middle of a flower field under blooming orange trees, you can practically see the bees being attracted by the scent.
